Brunch at Home

To me, weekends are for two things: sleeping in and brunch. One of my favorite things about Sunday is going to church and having a yummy brunch afterwards. But going out for a nice brunch every weekend can add up. So this weekend I decided to bring brunch to us by making a delicious Layered Zucchini and Ricotta Omelet Cake.  

I saw Rachael Ray making this recipe on Food Network a few months ago and immediately added it to my recipe list. It is easy to throw together and makes for the prettiest presentation. As long as you have a few extra plates on hand to flip the omelets, then you're good to go! 
    
It would be the perfect presentation and meal if you're hosting a brunch at your house. Even Chris said something about how pretty it was (he usually doesn't notice such things and wants me to hurry with the pictures so he can eat). It paired perfectly with fruit and a big cup of coffee.
