I made a trip to the farmer's market over the weekend, where I always buy tons of fresh veggies. I had in mind that I would make vegetable sandwiches for us this week, but when I realized I didn't have any bread (and was already in my pj's and didn't want to go to the store), I had to change up my game plan.
Since whole wheat tortillas were in the pantry, I decided to make veggie quesadillas. I always keep a jar of pesto in the fridge and was super happy when I found some leftover goat cheese because that makes for a perfect combo!
What you'll need:
half of a red pepper
a handful of mushrooms
half of a red onion
whole wheat tortillas
2 to 3 tablespoons of pesto
about 4 oz. of goat cheese
olive oil spray
salt and pepper to taste
*makes 2 to 3 quesadillas
How to make:
-Slice veggies and spray with olive oil (not much)
-Season veggies with salt and pepper
-Place veggies on a grill or George Forman until tender
-Meanwhile, put pesto and goat cheese on one side of tortilla
-When veggies are tender, put on other side of tortilla
-Fold and cook on the grill until tortilla is warm and cheese is melted
- Cut tortilla in half for quesadilla wedges
These turned out very tasty! I loved the creamy texture the goat cheese added to the quesadilla. Chris gave it a thumbs up, which I'm always happy about when it's a veggie dish because he is usually a "where is the meat?" kind of guy.
