The start of school is always so busy - the first few weeks I'm in my classroom really late working on lesson plans, making copies, and analyzing student data - only to come home and spend more time grading papers and studying the curriculum. It always takes me a while to get back in the swing of things...learning how to balance work and home life.
So to make things easier this year (at least in the cooking department), I decided to stock up on freezer meals. I often get home so late with a lot to do for the next day's lesson, that I don't have time to cook, and we end up ordering out. I love a good take out meal just as much as the next person, but we all know that it can get expensive and add on the pounds. My solution - ready to go meals to throw in the crockpot so that we can still enjoy a home cooked meal at the end of a busy day.
Today is the first day back at work for me, so I took some time yesterday to put together three recipes, two batches of each, for a total of six meals.
